DIY Trail Mix Three Ways

As we head into spring and the last of the snow starts to melt, our bodies are craving fresh air and sunlight. It’s a perfect time to lace up your hiking boots and hit some of the amazing trails and parks our city has to offer. 

One thing I love to take on hikes is trail mix. It’s lightweight and provides a good source of energy to keep me trucking along. Unfortunately, many grocery store (and sadly, even health food store) trail mixes contain excess sugar and industrial oils that can negate the health benefits. 

Fortunately, I have some tried-and-true recipes that are extremely easy and much healthier than what you’ll find at the store. The fun part? You can add any of your favorite nuts and dried fruit for endless and delicious varieties. Enjoy and have fun on the trails!

*NOTE: I’ve added extra virgin olive oil because I like how it holds everything together, but feel free to omit if you’d like more of a “raw” mix.

Cranberry Lemon Bliss Trail Mix

Ingredients:

  • 1 cup raw cashews
  • 1 cup raw pecans
  • ½ cup dried cranberries (no sugar added)
  • Zest of one lemon
  • 1 tsp. sea salt
  • 1 Tbsp. extra virgin olive oil

Directions:

  1. Preheat oven to 325°.
  2. Line a baking sheet with parchment paper and spread nuts in an even layer.
  3. Roast for 10 minutes, watching closely that the do not burn, and turning over halfway through.
  4. Remove nuts from oven and add cranberries. 
  5. Drizzle with olive oil, sea salt and lemon zest and mix thoroughly. 
  6. Let cool and store in an airtight container.

Hawaiian Escape Trail Mix

Ingredients:

  • 1 ½ cups raw macadamia nuts
  • ½ cup unsweetened banana chips
  • ¼ cup unsweetened coconut flakes
  • 1/2 cup cacao nibs or carob chips
  • 1 tsp. sea salt
  • 1 Tbsp. extra virgin olive oil

Directions:

  1. Preheat oven to 325°.
  2. Line a baking sheet with parchment paper and spread nuts and coconut flakes in an even layer.
  3. Roast for 10 minutes, watching closely that the do not burn, and turning over halfway through.
  4. Remove nuts from oven and drizzle with olive oil and sea salt, mix well.
  5. Let cool and add banana chips and carob chips or cocoa nibs.
  6. Store in an airtight container.

Chocolate Covered Strawberry Almond Trail Mix

Ingredients:

  • 1 cup raw almonds
  • 1 cup raw walnuts
  • 1 cup dried strawberries (unsweetened)
  • ¼ cup cocoa nibs or carob chips (or really good dark chocolate)
  • 1 Tbsp. chia seeds
  • 1 tsp. sea salt
  • 1 Tbsp. extra virgin olive oil

Directions:

  1. Preheat oven to 325°.
  2. Line a baking sheet with parchment paper and spread nuts in an even layer.
  3. Roast for 10 minutes, watching closely that the do not burn, and turning over halfway through.
  4. Remove nuts from oven and drizzle with olive oil, chia seeds and sea salt, mix well.
  5. Let cool and add dried strawberries and cocoa nibs or carob chips. 
  6. Store in an airtight container.
